Did you know that chocolate comes from a fruit? You read that right- the deep, dark, chocolatey goodness that you love so much starts with a pod that looks a lot like a melon and grows on a tree. The process by which that very fruity melon-like pod becomes chocolate makes all the difference when it comes to retaining its endless varieties of flavours and its naturally present goodness. And it is only craft chocolates that unlock that very side of chocolate that many people just don’t know about. Here is why:

Like whiskey, coffee beans or wine grapes, different cacao beans have different flavors.  By using beans sourced from only one farm or region I am able to highlight the distinct flavor characteristics of that particular bean.  Different bean origins, even bean varieties, harvest and post harvest production like fermentation, drying, roasting, grinding, all have a huge baring on the finished taste. No two bars are ever quite alike. Discovering those flavors is one of the joys of making (and eating) single-origin craft chocolate!

To make excellent chocolate we need to start with excellent beans.  I have searched and sourced the most flavorful beans, from the direct trade supplier who has direct relationship with farmers who grow and harvest them. By dealing directly with farmers we’re able to ensure we always receive the very best beans.

I start with cacao beans and coconut nectar, and perform every step of the chocolate making process in-house, including carefully hand wrapping each bar.  I am also one of the only chocolate makers to use our my freshly pressed, single origin cocoa butter in my chocolate.  Doing this is time consuming and difficult, but the result is exceptionally smooth and intensely flavorful chocolate.

With 4 ingredients and 72 hours in the stone grinder I can achieve a melting in your mouth creamy, rich, naturally sweetened chocolate. The Superfood Cocoa chocolate is made in small batches from delicious cacao beans guaranteeing at least 76% content of very high-quality aromatic beans. The selected cacao beans are considered a delicacy and prized for their superior flavours.

I invite you to fall in love with the variety of flavours that chocolate made from single-origin beans and single-origin butter can create and how different roasts can result in wildly different eating experiences.

I roast each batch of beautiful cacao beans to bring out the beautiful flavours, then grind, conch and finally I temper the cocoa liquor by hand. Once you have discovered what pleasure, complexity, richness and wide sensations there are in fine craft chocolate, you will never look at chocolate the same way, you never buy the chocolate the same way. This fine handcrafted chocolate has a shelf life of 24 months.

With no startup capital or partners, no sales team or financial consultant – I am working with passion on creating what most of us enjoy, real, delicious and fine chocolate not masked in sugar and fat presented in all confectionary chocolates or even in ‘no sugar chocolates’.

I also choose to invest in sustainable packaging – some biodegradable or recyclable. I ship in the UK, year-long without styrofoam.
