In all our years of making chocolate we hadn’t found milk that was lactose free. The lactose free milk makes exceptionally flavourful milk chocolate. To maximise the flavourful we freshly press the cacao butter from the same Boyar beans we use to make the chocolate, resulting in intense single origin flavour and exceptional buttery smoothness.

This single origin bar has been made with carefully selected Boyaca cocoa beans sourced from the Colombia. The silkiest, smoothest bean to bar chocolate allows the beautiful floral and fruity tones to shine through for you to indulge in delicious array of flavour notes. REGION AND COUNTRY: Boyaca, San Pablo De Borbur, Colombia

STORY: Nestled on the quiet mountainsides far beyond San Pablo de Borbur, a group of 80 family farmers are connecting to the global demand for fine flavour cacao while alleviating the local pressures of coca production. On top of being a more lucrative cash crop for the community, the cacao grown here helps this remote Colombian town distance itself from drugs and crime.

They receive technical assistance and best growing practices that allow them to boost their yields. And through our partnership with the Asociacion Campesina, we’re bringing a positive social impact to the region by starting gender equity conversations inside a community where women play an active role in family finances.

HARVEST: April – June, October – December

GENETICS: Criollo & Trinitario

POST HARVESTING PROCESS: Beans are fermented in tiered wooden boxes during 5 to 6 days. Once fermented, the cacao is dried in solar dryers and bagged in 50 kg. polypropylene bags.

FLAVOUR: Sweet spices, dark floral, toasted marshmallows, a subtle hint of bitterness.
